Vineyard & Production

The grapes are hand-selected from prime sites: 60% from the maritime-influenced Helderberg Coastal area, 25% from high-altitude Simonsberg slopes, 8% from Helderberg North, and 7% from the Jonkershoek valley floor. Following temperature-controlled fermentation with manual plunging, the wine undergoes extended skin maceration for up to 24 days. It is then transferred to French oak barrels (72% new) for natural secondary fermentation. After one year, the finest batches are blended and returned to barrel for a second year before being bottled unfined and unfiltered, resting for a final year in the bottle prior to release.
