As the name suggests, no acid, enzymes or yeast were used in the making of this wine only natural fermentation and careful winemaking. A bouquet of earth, black cherries and spices with a subtle mineral/slate quality, oak providing support. Vineyard

Sourced from granite-based soils with northern-facing aspect in Frankland River, Great Southern. The granite terroir imparts distinctive minerality and slate-like character to the wine.

Winemaking

Grapes were hand-harvested and sorted and naturally fermented. The wine spent 6 months in four-year-old French oak prior to bottling. As the name suggests, no acid, enzymes or yeast were used in the making of this wine—pure minimal intervention winemaking.
