Vineyard & Winemaking

Produced and bottled entirely at Kanonkop Estate in Stellenbosch, South Africa. The cooler growing conditions of the 2021 vintage promote elegance and softer tannins. Fermented in open-top concrete fermenters at 28°C with mechanical punch downs every 2 hours for 3-5 days. Malolactic fermentation was completed, followed by 12 months maturation in 2nd and 3rd fill 225L French Nevers oak barrels, adding subtle complexity without overwhelming the fruit.
