Meet the producer

Il Casato focuses on crafting wines that highlight varietal purity while reflecting the local terroir. Sustainable vineyard practices and careful vinification ensure wines that are balanced, expressive, and approachable.

Production

The grapes are softly pressed to extract the must, which undergoes white vinification in stainless steel tanks at a controlled temperature of 16–18°C. After fermentation, the wine undergoes aging and stabilization processes before cold bottling, preserving freshness and aromatic intensity.

Tasting notes

Straw yellow in colour, this wine offers an intense and long-lasting bouquet of fruity and floral aromas, with hints of golden apple, lychee, and hay. On the palate, it is dry, elegant, and well-structured, with a harmonious balance between body and acidity.

Ideal as an aperitif or paired with lightly seasoned dishes, cheeses, cold cuts, risotto, well-seasoned seafood, and white meats.
