Viña AB is a refined expression of Amontillado from the prestigious Jerez Superior area in Andalusia, Spain. The vineyards are planted on distinctive Albariza soils, a white, chalk-rich earth (up to 60% chalk content) renowned for its ability to retain moisture throughout the region’s long, hot summers, where irrigation is prohibited. Influenced by the Atlantic Ocean’s cool Poniente winds, the hot Levante breezes from North Africa, and the nearby Guadalquivir and Guadalete rivers, the vineyards enjoy a unique microclimate that enhances grape balance and concentration.

Founded in 1835, González Byass is one of Spain’s most iconic Sherry producers, internationally acclaimed for its craftsmanship and innovation. From the legendary Tío Pepe Fino to the complex Amontillados, González Byass captures the essence of Jerez winemaking with precision, tradition, and respect for terroir.

Production

The Palomino grapes used for Viña AB begin life as Tío Pepe. Only the finest free-run juice (mosto yema) and delicate first-press must are selected. After fermentation to 11–12% ABV, the wine is fortified to 15.5% and aged under a natural layer of yeast, known as flor, for a minimum of four years in the Tío Pepe Solera system. It is then transferred to the Viña AB Solera, where it matures oxidatively for a further eight years as the flor fades. This slow transformation imparts depth, nuttiness, and complexity, resulting in what is essentially a 12-year-old Tío Pepe, carefully overseen by master blender Antonio Flores.

Tasting notes

Light amber in colour, Viña AB offers a delicate bouquet of hazelnuts, toasted almonds, and subtle yeasty undertones. The palate is dry and elegant, with fine oak nuances from 12 years in cask, balanced acidity, and a long, lingering finish with hints of salt and gentle bitterness.

Food match

Serve well chilled at 8–12°C in a small white wine glass to appreciate its full bouquet. Perfect with charcuterie, duck, consommé, hard cheeses, and toasted nuts. Its versatility also allows it to pair beautifully with complex or savoury dishes.
