Tío Pepe Fino Sherry is the most famous Fino wine in the world, crafted from 100% Palomino Fino grapes that thrive in the chalky albariza soils of Jerez, Spain. Aged for a minimum of four years in the traditional solera system under a protective layer of flor, the wine develops its signature savoury, yeasty character. The result is a dry, elegant sherry with a crisp, refreshing palate, delicate almond and green apple notes, and a clean, persistent finish.

Meet the Producer

Founded in 1835, Bodegas González Byass is a historic Jerez winery recognized worldwide for its mastery of sherry production. The winery combines centuries-old tradition with careful modern techniques to craft wines that express the unique character of Andalusian terroir.

Production

Grapes are carefully harvested by hand to preserve freshness and integrity. The Palomino Fino grapes are aged under flor in the solera system, which allows the wine to develop its pale golden colour, refined aromas, and crisp, dry profile. The careful blending and aging process ensures Tío Pepe’s distinctive elegance, complexity, and balanced texture.

Tasting Notes

Tío Pepe has a pale golden appearance, reflecting its years under flor. The nose offers sharp and elegant aromas with balanced notes of yeast and almonds typical of the Palomino Fino variety. On the palate, it is completely dry, with hints of green olives, almonds, and green apple, finishing slightly bitter and persistently clean.

Food Match

Serve Tío Pepe very chilled, between 4º and 7ºC, in a small white wine glass to fully appreciate its aromas. It is an ideal aperitif and pairs beautifully with light tapas, seafood, olives, and fresh salads.
