Fernando de Castilla White Vermut is a remarkable revival of a lost Jerez tradition — crafted from Palomino and Moscatel grapes and infused with a carefully selected blend of botanicals. Elegant, aromatic and distinctly Spanish, this is vermouth as it was always meant to be.

Jerez was once a celebrated centre of vermut production — until it faded away in the late 1960s. Fernando de Castilla, one of the region's most respected bodegas, never lost their registered vermut producer status, and when the category enjoyed its renaissance in Spanish and UK bars, they were perfectly placed to bring it back to life. The result is a beautifully crafted white vermut with real depth, character and a sense of place.

Production

Palomino and Moscatel grapes are pressed and fermented in stainless steel before being aged in barrel for around four years. The wine is then infused with a blend of botanicals including wormwood, orange and lemon peel, and cloves — a process that gives the vermut its characteristic complexity and aromatic lift. Winemaker: Maribel Vergara.

Tasting Notes

Pronounced Moscatel grape and spice aromas on the nose. Semi-sweet and persistent on the palate, with characteristic wormwood bitterness alongside clove and thyme. Elegant, layered and beautifully balanced.

Perfect Pairings

Serve over ice with a slice of lemon or lemon peel alongside a dish of olives and roasted almonds — the classic Spanish aperitivo. Also makes an exceptional base for a Martini or a Vermut Tonic.
