Donjon de Lamarque is the second wine of Château Lamarque, crafted from young vines and primarily Merlot (60%) with Cabernet Franc and Cabernet Sauvignon (40%). Before alcoholic fermentation, depending on the vintage, 10–15% of each vat is “bled off” to increase fruit concentration; these bleedings are vinified separately to create a rosé wine, Noblesse Oblige. Fermentation is carried out separately by grape variety over 21 days in thermoregulated vats at 26–28 °C. Gentle pumping over and racking preserve freshness and fruit expression.

Vinification

After fermentation, the wine is aged in Allier oak barrels for 12–14 months. Barrel selection is meticulous, pairing wine tannins with the wood, and only barrels of two wines are used for Donjon. Racking occurs every four months, and the wine is lightly fined and sieved before bottling, without filtration.

Tasting notes

A fruity and fleshy wine with notes of vanilla and forest undergrowth. Medium-bodied, approachable, and versatile, Donjon de Lamarque is not a traditional “vin de garde” but can age 5–8 years.

Food match

Serve with white or red meats, spicy dishes, grilled fish, desserts featuring red fruits (strawberries, raspberries, blackberries, blackcurrants, blueberries, redcurrants, cherries, figs) and hard cheeses (excluding Vacherin and Cancoillotte). Not recommended with wine-based sauces like coq au vin or lamprey à la Bordelaise, but pairs well with Lièvre à la Royale.
