Vineyard & Production

The fruit is hand-harvested from select cool-climate vineyards cultivated on limestone, clay, and sandy loam soils. Upon arrival at the winery, the grapes are rigorously sorted, with a portion kept as whole clusters to enhance structural complexity and spice. Spontaneous fermentation occurs using native yeasts, followed by gentle hand punch-downs to extract fine-grained tannins and vibrant colour. The wine matures for around twelve to fourteen months in French oak barrels, a low proportion of which is new, allowing the pure expression of Santa Barbara fruit to remain front and centre.

In the glass, it displays a radiant ruby hue. The nose opens with an expressive bouquet of fresh wild strawberries, sour red cherries, and pomegranate, interwoven with notes of crushed rose petals, dried sage, orange peel, and subtle baking spices.
