Meet the Producer

The De Bortoli family story began over 90 years ago and is now told across four generations. From humble beginnings to becoming one of Australia's top wine producers, De Bortoli continues to lead with innovation and integrity. The premium fortified wines are a living history of the family, with some parcels dating back decades, crafted by fortified wine specialist Julie Mortlock.

Production

When botrytised Semillon grapes are harvested for Noble One, a parcel of fruit at approximately 20-22 baume is selected for Black Noble. Very little fermentation occurs before fortification with neutral grape spirit is added. The wine is then clarified, a touch of brandy spirit added for further complexity, before being transferred into used Noble One barriques where it matures for a minimum of 10 years.

Tasting Notes

Amber colour with olive green hues. Complex aromas of toffee, coffee, raisins and mandarin peel. Delicious flavours of lexia raisin and dried dates are joined by citrus peel and caramel. Concentrated and viscous with a very long and complex finish.

Food Match

Enjoy with Christmas pudding or sticky date pudding. Try poured over vanilla ice cream or with a cheese platter after dinner. Also excellent with dark chocolate desserts or enjoyed on its own as a digestif.
