Crafted in County Down, Northern Ireland, this rum is inspired by the smuggling traditions of the Copeland Islands during the eighteenth and nineteenth centuries. It is a marriage of light rum distilled at The Copeland Distillery and heavy rum imported from Barbados. The Barbadian component is aged in Kentucky bourbon barrels, while the locally distilled rum matures in a combination of French Pinot Noir wine casks and quarter bourbon casks, resulting in a layered and distinctive flavour profile.
On the nose, the rum opens with warm spice and hints of gingerbread, evoking a sense of comfort and depth. The palate begins with a lively kick of root ginger and black pepper, followed by ripe tropical fruit notes such as pineapple. Toasted coconut adds a creamy texture, while undertones of vanilla and caramel round out the experience. The finish is smooth and lingering, with a subtle sweetness and a touch of oak.
