Chateau l'Ermite d'Auzan has its roots in the 11th century, when the hermits of the Sainte Cecile d'Estagel Abbaye first cultivated these lands. Today, winemaker Tanguy Castillon continues that heritage with a thoroughly modern, biodynamic approach, working in partnership with Boutinot to produce wines that are organic, vegan, and vegetarian friendly, with a genuine sense of place and purpose. Vineyard and Production

Sourced from young vines with an average age of 10 years, grown in vineyards strewn with smooth pebbles from the Durance river valley and overlooking the Camargue. After harvesting, the grapes are chilled for 3 days before a natural fermentation at controlled temperatures. The wine is entirely unoaked, preserving the fresh, crunchy fruit character that defines this cuvee. Organic, biodynamic, vegan, and vegetarian friendly.

Tasting Notes

Aromas of wild woodland fruits and spice open the nose. The palate delivers concentrated bramble fruit with charcoal tannins and crunchy, fresh acidity that keeps it lifted, juicy, and wonderfully moreish.
