Vineyard & Production

Following harvest, the healthiest bunches are hung and laid out on traditional cane mats in well-ventilated drying rooms (vinsantaia) until mid-winter to concentrate sugars and aromatics. Once pressed, the dense, sweet juice undergoes a slow, natural fermentation and long maturation in small sealed oak casks (caratelli) for around five years before careful bottling.
