La Côte Sauvage from Domaine Boutinot is the flagship Cairanne cuvée, showcasing the intensity and finesse of hilltop cru vineyards in the Southern Rhône. Carefully hand-harvested old vine Grenache Noir (60%), Syrah (25%), and Mourvèdre (10%) form a luxuriously elegant, full-bodied red with rich dark fruit, complex spice, and integrated oak.

Meet the Producer

Domaine Boutinot has spent over 30 years crafting wines in the Southern Rhône, combining traditional techniques with meticulous vineyard management. Their Cairanne vineyards benefit from minimal intervention, full sun, and the cleansing Mistral winds, producing grapes with exceptional concentration and depth.

Production

Cairanne, a named Côtes du Rhône Villages since 1967, achieved cru appellation status in 2016. Domaine Boutinot’s vineyards, located on La Monté de Ventabren, are planted on argilo-calcaire soils – limestone pebbles over water-retentive clay – which help the vines ripen slowly while sustaining them in the hot summer.

Grapes are hand-harvested into small baskets and vinified traditionally in 6,000-litre open oak vats using natural yeasts. Each parcel undergoes long cuvaison, gentle remontage, and manual pigeage. Selected parcels are matured for 22 months in French oak barrels and demi-muids of varying ages, creating a wine that balances power and finesse. The final assemblage is crafted from over 110 barrels, ensuring complexity and elegance.

Tasting Notes

La Côte Sauvage is opulent, rich, and complex, with aromas of morello cherry, cinnamon spice, and dark plum. The palate reveals liquorice, chocolate, and a hint of black tea, supported by smooth, supple tannins. This full-bodied, elegant red rewards time in the glass, revealing greater depth and refinement with air.
