The Bottega Vinai Pinot Grigio is an expressive white wine crafted in Italy’s mountainous Trentino region. Offering crisp acidity, subtle almond notes, and floral, apple, and citrus aromas, this Pinot Grigio balances freshness and texture, making it perfect for seafood, light dishes, or simply as a refreshing aperitif.

Meet the Producer

Cavit is a leading cooperative in northeast Italy’s Trentino region, producing wines that reflect the unique character of its mountainous vineyards. Founded as a consortium of local growers, Cavit combines traditional methods with modern winemaking to craft high-quality wines with regional authenticity.

Production

Grapes are grown in the Valle dei Laghi, benefiting from a sub-Mediterranean climate and well-drained, medium-fertile soils. Harvested at medium-low yields (70 hl/ha), the grapes are softly pressed and fermented in stainless steel at 20°C using selected yeasts. Vinification is carried out off the skins to prevent colour extraction, and the wine is matured in stainless steel for 4 months to preserve freshness and aromatic purity.

Tasting Notes

A delicate nose of honeyed spice, floral notes, apple, and citrus. The palate shows ripe fruit and subtle almond flavours, with crisp, lemony acidity and good weight through to a clean, refreshing finish.

Food Pairing

Pairs beautifully with seafood risottos, baked fish, and cold white meats. Ideal as a summer aperitif or for light Italian cuisine.
