Vineyard & Production

The grapes come from hillside blocks just 11 miles from the Atlantic Ocean, with granitic, well-draining soils and cooling ocean breezes. The estate's mosaic of microclimates, elevations and soil types ensures steady ripening. Grapes are hand-harvested and carefully sorted, with canopy management and minimal intervention in the vineyard promoting concentration and freshness. After a five-day maceration on skins, fermentation occurs in large 150-hectolitre cement tanks at 26–28°C, with gentle pump-overs twice daily. The wine is aged 6–12 months on lees in 50-hectolitre, untoasted French oak casks to enhance texture and complexity, before bottling.
