Viticulture

The vineyards are rooted in calcareous clay soils enriched with marl, sand, lapilli and lava slag – remnants of the ancient volcanic complex of the Alban Hills in Lazio. This diverse terroir provides both structure and minerality to the fruit, creating wines with distinctive character.

Winemaking

A combination of manual and mechanical harvesting ensures optimal grape quality. After gentle pressing with brief skin contact to achieve the delicate pink colour, fermentation takes place using selected yeasts at controlled temperatures below 20°C. The wine is stored in temperature-controlled stainless steel tanks to preserve its fresh, vibrant character, then cold-stabilised and carefully bottled to maintain its crisp profile.
