This sherry has an intense aroma with some sharp briney notes and piercing, almost acetatic green apple notes. A punchy yeast gives a hint of bitterness, off-set by mellow notes such as hay and butter. It becomes a little rounder over time, with yellow apple and chamomile, as well as a subtle sweet touch.
