The Biscardo family have been making wine in Soave for over 150 years and are now led by brothers Maurizio and Martino.
Maurizio’s long winemaking career has seen him consult for renowned wineries across Italy, where he discovered the vineyards that inspired their Puglian range. Today, both the Veneto and Puglian wines are celebrated for their irresistible drinkability, aromatic purity, and exceptional value.

Viticulture

The Amarone vineyards are located on the hills surrounding Verona at altitudes of 150–400 metres. Soils vary by valley, but all are rich in limestone with a high calcareous content: silt on loam rocks, compact red soil on basalt, and compact red soil on Eocene limestone. Large stones dominate the topsoil, contributing to excellent drainage and vine health. Grapes are still hand-harvested, placed in wooden crates at dawn or dusk to protect them from daytime heat.

Winemaking

Biscardo Amarone is produced in special drying chambers under carefully controlled conditions. The skins of the grapes—vital for tannin, colour, and flavour concentration—undergo a 120-day drying (appassimento) process. During this time, grapes lose 30–45% of their weight, concentrating sugars and flavours while softening acidity and tannins. Fermentation takes place at low temperatures for 30–50 days, followed by ageing first in stainless steel, then in small oak barrels (20–50 hl) to enhance complexity and balance.

Tasting profile

Intense garnet red in colour, with a rich, persistent bouquet of cherries. The palate is velvety and elegant, with notes of cherry, bitter almond, and a characteristic touch of gentle bitterness that defines great Amarone.
