Vineyard and Production

The grapes come from a 20‑year‑old organic and biodynamic vineyard set on a flat plain surrounded by mountains, where cool nights and long sunny days create perfect balance. Hand‑harvested after mid‑October, the fruit undergoes spontaneous fermentation with native yeasts, gentle extraction and extended skin contact. Ageing takes place in third‑use French oak and clay amphorae, giving complexity, structure and a subtle earthiness while preserving purity. Natural stabilisation during the region’s freezing winter completes the process.

Tasting Notes

Expect concentrated flavours of blackberry, blueberry and plum layered with violet, rose and rosemary. Notes of cocoa, mint, earth, espresso, tobacco, dark chocolate and black pepper add depth and intrigue. Fine tannins and lively acidity give structure and lift, creating a finish that is long, complex and expressive.
