Bodegas Altolandon, Dulce Enero Ice Wine, a rare and exquisite ice wine from Spain’s high-altitude Manchuela region, offering intense aromas of tropical fruits, peach, apricot, and subtle spice. The palate is rich with white-fleshed and stone fruits, balanced by crisp acidity, a mineral undertone, and a long, sweet finish.

About the Producer

Bodegas Altolandon is run by Rosalia Molina, who crafts organic wines in one of Spain’s highest altitude vineyards at 1,100m above sea level. Her focus is on expressing the terroir of DO Manchuela through careful, natural viticulture. The vineyards are certified organic, promoting biodiversity with freely roaming farm animals, and all grapes are hand-harvested and vinified with minimal intervention. Wines are aged in clay amphorae or French oak to develop texture and complexity.

Vineyard

Grapes are hand-picked in January, when frozen at temperatures below -5°C for at least five days. The frozen grapes are pressed immediately to concentrate sugars and retain acidity, producing a naturally sweet, aromatic wine. Only exceptional vintages allow this ice wine to be made.

Winemaking

Fermentation uses native yeasts and is slow, taking 2–3 months in small stainless steel tanks. No added sulphites are used, and clarification occurs naturally. The process preserves the purity of fruit and the character of the vineyard.

Tasting Notes

Golden-amber in colour, the wine bursts with aromas of sweet tropical fruits, citrus, and honey. The palate is vibrant and medium-bodied, with ripe stone fruits, mineral notes, and persistent sweetness balanced by refreshing acidity.

Food Pairing

Serve very cold as an aperitif or with foie gras, strong cheeses, ice cream, Iberico ham, or prawns with lemongrass.
