Islay malts are typically known for their intense peat smoke, often accompanied by notes of iodine, seaweed, brine, and medicinal herbs—flavours that reflect both the peated barley used in production and the island’s salty sea air. Distilleries like Laphroaig, Lagavulin, and Ardbeg, located along the island’s southern coast, are especially renowned for their heavily peated expressions. Others, such as Bunnahabhain and Bruichladdich, offer lighter or unpeated styles, showcasing the diversity within the region.
The signature smoky and medicinal character comes primarily from peat smoke, which is used to dry malted barley. Burning peat releases phenolic compounds that bind to the barley and survive distillation, creating flavours described as smoky, earthy, iodine‑like or antiseptic. Islay’s coastal climate also contributes briny, maritime notes.
PPM (parts per million) measures the level of phenols in the malted barley before distillation. There is no single “correct” way, but many enthusiasts recommend starting neat to appreciate the full character. Adding a few drops of water can open up the aromas and soften the peat, especially in high‑PPM whiskies. Ice will chill and mute some flavours, which some drinkers prefer for heavily smoky expressions. Ultimately, the best method is the one that suits your palate.
