Dark rum is a full-bodied, richly flavoured spirit made from molasses, a by-product of sugarcane processing. It’s typically aged for a longer period in charred oak barrels, which imparts its deep amber to brown colour and complex taste profile. Some producers may also add caramel colouring to enhance its hue. Unlike white or gold rum, dark rum is known for its intense notes of molasses, brown sugar, vanilla, spice, and sometimes smoke, making it ideal for sipping neat or using in bold cocktails like the Dark 'n' Stormy, Hurricane, or Painkiller. It’s also a popular ingredient in baking and cooking, especially in traditional British recipes like Christmas pudding and rum cake.
Dark rum typically gains its deep colour and richer flavour either from extended ageing in oak barrels or from the addition of caramel or molasses. Ageing in charred or seasoned barrels naturally darkens the spirit and adds complexity, but colour alone does not guarantee age — some producers darken rum with additives instead.
Dark rum refers mainly to colour and ageing, while spiced rum is defined by the addition of spices and flavourings such as vanilla, cinnamon or clove. A dark rum may be aged, coloured, or both, whereas spiced rum is intentionally flavoured after distillation.

Sugar levels vary widely by producer and region. Some countries, such as Jamaica, do not permit added sugar in dark rum, while others allow sweetening or caramel addition for colour and flavour. Because regulations differ globally, sweetness can range from dry and robust to noticeably sweetened.
Country of origin has a major influence on flavour due to differences in fermentation, distillation methods, and climate. Jamaican rums are known for their funky, high‑ester intensity, Guyanese (Demerara) rums for their molasses‑rich depth, and Barbadian rums for their balanced, refined profiles. Tropical climates also accelerate ageing, producing richer, more concentrated flavours than cooler regions.
It’s the foundation of many bold and iconic cocktails, including the Dark 'n' Stormy—a spicy blend of dark rum and ginger beer with lime—and the tropical Painkiller, which combines dark rum with pineapple juice, orange juice, coconut cream, and nutmeg.
