Distillery & Maturation

Wolfburn Distillery was established in 2013 in Thurso, Caithness, on the site of the original Wolfburn Distillery that operated in the 1820s, making it Scotland's northernmost mainland distillery. The Manzanilla Cask Finish is matured in Wolfburn's traditional dunnage warehouses before being finished in the finest Spanish oak Manzanilla sherry casks, which add a distinctive dry, vinous complexity to the spirit. Bottled at 46% ABV without chill filtration and at natural colour.

Tasting Notes

The nose offers golden syrup meeting cashew nut butter, overlaid with seductive vinous tones and an exceptional depth of sweet aromas. On the palate, there is a wonderful oily richness, coating the palate as the flavours unfurl: classic dry Manzanilla tones lead to rich fruit flavours of sultanas, plums, and dates, with subtle hints of toffee and honey.
