Description
Fernando de Castilla Antique Palo Cortado Sherry is a legendary, rare, and captivating fortified wine produced in the historic city of Jerez de la Frontera in Andalusia, Spain. Bodegas Rey Fernando de Castilla is globally celebrated as one of the elite boutique houses in the Sherry Triangle, revered for its unblemished commitment to ancient soleras and uncompromised quality. Belonging to the prestigious Antique range, this bottling represents sherry's greatest natural enigma, combining the delicate, lifted nose of an Amontillado with the broad, velvety palate structure of an Oloroso.
Why You'll Love It
This wine stands out for its profound aromatic complexity, striking dry elegance, and silky mouthfeel. Palo Cortado occurs naturally in only a tiny fraction of barrels when a wine originally intended to age biologically under flor spontaneously loses its yeast layer and transitions into oxidative aging. Drawn from casks with an average age exceeding thirty years and bottled without chill-filtration or fining, it offers an extraordinary balance of toasted nuts, orange peel, and antique wood, making it a prized choice for serious wine lovers.
Vineyard & Production
The Palomino Fino grapes are hand-harvested from high-grade vineyards planted on pristine, chalk-rich albariza soils in the Jerez region. The base wine begins its life aging under a delicate veil of yeast (flor), developing crisp, fine characteristics. When the flor layer unexpectedly dissipates, the cellar master identifies the unique potential of the cask and fortifies the wine slightly higher to shift it into full oxidative aging within the traditional criaderas y solera system. Over three decades in old American oak barrels, the wine slowly concentrates and gains immense textural richness.
Tasting Notes
In the glass, it presents a brilliant, deep topaz-amber colour with mahogany reflections. The nose is intense, elegant, and multifaceted, opening with aromas of roasted hazelnuts, pecans, and dried bitter orange zest, seamlessly interwoven with subtle hints of sea salt, polished mahogany, dark leather, and dried wildflowers. On the palate, it is bone-dry, concentrated, and supple, delivering rich flavours of toasted nuts, dried citrus peel, and warm spice, supported by a lively line of acidity that flows into an remarkably long, savory finish.
Perfect Pairings
With its bone-dry profile, vibrant acidity, and broad, velvety structure, this rare Palo Cortado is an extraordinary partner for rich, complex gastronomy. It pairs magnificently with slow-cooked ox cheek, roasted game birds such as pheasant or grouse, grilled venison loin, and braised pork belly. It is also an exceptional match for wild mushroom dishes, aged cheeses like Manchego, Comté, or Gouda, and cured Iberian ham (Jamón Ibérico de Bellota).
