Laborie is a historic Western Cape winery dedicated to producing premium wines that reflect the unique terroir of South Africa. Winemaker Justin Corrans crafts wines with precision and care, combining traditional techniques with modern expertise.

Production

The grapes were hand-harvested into bins in the cool of the morning, then whole-bunch pressed with only free-run juice used for the final blend. A selected yeast strain was used for primary fermentation, with 10% of the Chardonnay undergoing malolactic fermentation. The wine was blended and bottled for secondary fermentation in the bottle, followed by 18 months of lees ageing before disgorgement.
