Distillery & Botanicals

The Isle of Harris Distillery was founded in 2015 in Tarbert, Isle of Harris, with a mission to create a sustainable social distillery at the heart of the island community. The gin is made with nine botanicals: Outer Hebridean Sugar Kelp seaweed, Macedonian Juniper Berries, English Coriander Seed, Cubebs / Javan Pepper, Bitter Orange Peel, Angelica Root, Cassia Bark, Orris Root, and Liquorice Root. Bottled at 45% ABV.

Tasting Notes

The nose is well-defined and inviting, with juniper and pine needles immediately followed by fresh citrus notes of bitter orange, lime, and grapefruit. Complex floral notes of rose and wallflowers develop alongside crushed green herbs, coriander, and gooseberry, all underpinned by mixed spice. Sugar Kelp adds richness and a dry maritime depth. On the palate, refreshing and beautifully balanced, with bitter juniper and pine meeting sweet mango, grapefruit, and orange, with a green herb note of crushed coriander. The finish is long and clean; as the juniper and citrus fade, sweet vanilla and black pepper remain with a gentle reminder of the sea.

Perfect Serve

Serve over plenty of ice with a premium light tonic water and a slice of pink grapefruit to complement the citrus and maritime botanicals. Also outstanding neat over ice to fully appreciate the complexity of the Sugar Kelp and spice botanicals.
