Tasting Notes

Nose: The lightest imaginable phenol drifts over the nose like a glider over the Antrim coast. Quiet and barely noticeable unless you look for it, but what it surveys is rather beautiful. Palate: Stunning texture, a mix of light ulmo honey and mocha makes for the friendliest and most beautiful delivery and follow through. The deft smoke drifts about without portfolio. Finish: Long and slightly fruity, with a lovely balance of stone fruits and sherry influence that lingers delightfully before finally giving way to rich mocha and a wonderful final kiss of smoke.

Perfect Pairings

Excellent neat or over a single large ice cube. The gentle smoke and stone fruit character pairs beautifully with smoked salmon, aged Gouda, and dark chocolate with sea salt. A superb aperitif or after-dinner dram.
