Method and Madness Pot Still Irish Whiskey is the most unusual of this new range of boundary pushing expressions. Distilled at the Midleton Distiller, it takes the well trodden path initially being matured in sherry and bourbon barrels. Then things get interesting. The whiskey is finished in French Chestnut barrels and this is the first time the distillery has used anything other than oak to mature whiskey.
The nose is liquorice, herbs, ginger with mint freshness. The palate provides sweet fruit and spice, cinnamon and banana. Finally you're treated to slowly fading fruit and spice culminating in a rich, woody taste.
