If it is aged for a minimum of 2 years in charred oak barrels it will be declared as ‘Straight Rye’. Corn Whiskey hails back to the very start of distilling in America as it was the cheapest material they had to hand. Corn Whiskey must be made from 80% or more corn.

American Corn Whiskey, by contrast, is made from a mash bill containing at least 80% corn. It is often unaged or aged in used or uncharred oak barrels, resulting in a lighter, sweeter spirit with flavours of vanilla, caramel, and honey. Unlike bourbon, which also uses corn but requires new charred oak ageing, corn whiskey retains a more rustic and raw profile, sometimes referred to as "moonshine" when unaged.
