Von Siebenthal Carabantes Syrah is a premium Chilean red wine crafted from 85% Syrah and 15% Cabernet Sauvignon. Hailing from the Aconcagua Valley, it reflects the unique terroir of this region, where cool coastal breezes meet the warmth of the Andes foothills. The vineyard’s location on Panquehue’s terraces provides excellent drainage and optimal sun exposure, allowing the grapes to ripen evenly while retaining vibrant acidity.
Winemaking
The grapes are hand-harvested and undergo fermentation and maceration in stainless steel tanks for approximately 15–20 days at controlled temperatures between 20° and 25°C. After fermentation, the wine is aged in oak barrels for 18 months, enhancing its structure and complexity while preserving the purity of the fruit. This careful balance of oak and varietal character creates a wine that is both elegant and expressive.
Tasting Notes
Von Siebenthal Carabantes Syrah has a deep ruby colour with a purple rim. The nose is intense and complex, revealing aromas of violet, blueberry, blackberry, rosemary, cracked pepper, dark chocolate, cedar, and a subtle balsamic lift. On the palate, the wine is full-bodied yet poised, with ripe black and blue fruits wrapped in fine, velvety tannins and balanced by refreshing acidity. The oak is seamlessly integrated, leading to a long, precise finish with pepper-spiced nuances.
Food Pairing
This wine pairs beautifully with herb-crusted lamb, beef short ribs with a soy-black pepper glaze, duck breast with blackberry jus, or aged cheeses such as Manchego. It is a wine that rewards careful pairing, enhancing the flavours of rich, savoury dishes.
