A solidly-built and elegant Pinot Noir, offering a silky, fruit-forward palate with refined structure and the potential for graceful ageing. Notes of red berries and subtle earthiness are complemented by fine tannins and a lingering finish.

Meet the producer
Savigny-Lès-Beaune is known for producing almost exclusively red wines under village and premier cru appellations, emphasizing the expression of Pinot Noir through careful vineyard management and traditional winemaking techniques.

Vineyard
The Dominode vineyard lies between 220 and 360 metres, with east and north-east exposures ideal for Pinot Noir. The deep, stony soils with a mix of fallen rocks from the hill above provide excellent drainage and contribute to the wine’s structure, minerality, and complexity.

Winemaking
Grapes are hand-harvested and sorted before gentle pressing. Fermentation occurs in open wood and steel vats over three to four weeks with twice-daily punch-downs. The wine is matured for 18 months in oak barrels, a third of which are new, to integrate structure, spice, and depth.

Tasting notes
Silky and expressive, the wine shows ripe red fruit, subtle floral and earthy notes, and fine-grained tannins. Balanced, elegant, and harmonious with excellent ageing potential.

Pairs beautifully with beef tartare, beef tataki, roasted poultry, veal, lamb, mushroom tarts, or mature cheeses.
