Vineyard & Production

The grapes are harvested at the peak of maturity to lock in natural freshness and purity of flavour. Immediately following harvest, they undergo a gentle pneumatic pressing, followed by a 24-hour gravity settling in stainless steel vats. Fermentation takes place in temperature-controlled stainless steel tanks for approximately 15 days at 21 degrees Celsius, followed by a natural malolactic fermentation to soften the acidity and add texture. After resting, the wine undergoes careful racking, fining, and five days of cold stabilisation at -3 degrees Celsius before final filtration and bottling.

In the glass, this Chablis reveals a bright, pale gold colour. The nose opens with restrained aromas of fresh citrus, green apple, and subtle stone fruit, beautifully complemented by a classic chalky, wet-stone mineral character. On the palate, the wine is clear, linear, and impeccably balanced. A fine, persistent minerality underpins the bright lemon and grapefruit flavours, leading to a crisp, beautifully refreshing, and structured finish.
