Shaun and the team have taken the Hell's Stone Dulow blend whisky and aged it for a further 6 months in a Mezcal barrel in the shadow of St Michael's Mount on the wild cornish coast. The result is a complex oaky whisky with a spicy mezcal after taste.
Diageo have lobbied for some time in order to change the rules so they can use Mezcal barrels at some of their Scottish Distilleries. Since Pocketful of Stones are quite literally writing the rules on what Cornish Whisky is and can be, they don't have to worry about any of that - you don't need to change the rules when you're busy making them! Only 400 bottles have been produced during the first release of this unusual and maybe ground breaking bottling?
