The Old Tom from Citadelle is has a delightful aroma of juniper, orange zest and cardamom which develops into floral softer notes of jasmine and honeysuckle. The flavours to be found on the palate is full bodied, elegant and has a sweet and sour profile of lemon zest, anise, almond and long lasting spices with that classic Old Tom style sweetness.

Citadelle Old Tom has been aged for 3 to four months in casks before it has been blended with some sugar to get that sweet style and is then added back to the casks for a further few months. The sugar used is toasted in copper cauldrons to give some caramelization.
