GINRAW - Gin Born Of A Love Of Barcelona

What happens when two men born and bred in Barcelona decide to express their love for their city? Given that Spain sits at the forefront of the modern gin movement, the answer was always likely to be a striking new spirit — and GINRAW does not disappoint. The project began with Roger Burgués and Luis Jáuregui, two marketers devoted to Barcelona who both had long experience in the drinks and luxury sectors. Using their connections, they built an impressive team: master perfumer Rossend Mateu, mixologist Javier Caballero, sommelier Sergi Figueras and chef Xano Saguer.
To make GINRAW stand out, they combined tradition with cutting-edge culinary technology. A classic copper pot still is used solely for the juniper distillate, while each of the other six botanicals is distilled separately in a Rotaval — a rotary evaporator that works at low temperature, preserving fresh aromatics. The components are then blended, brought to bottling strength and rested.
Local botanicals include lemon peel from Murcia, cedrat peel from Valencia and Spanish bay leaf, while more exotic ingredients are kaffir lime leaves from Thailand, black cardamom from India and coriander seed from Egypt.

Each batch yields just 5,000 numbered bottles. On the nose, bright juniper meets zesty citrus, instantly mouth-watering. The palate follows with kaffir lime leaf, then shifts into subtle spice, a hint of smoke and the depth of bay. The result is a polished, thoughtfully crafted gin.
