Whilst waiting for his own spirit to mature he has blended two exotic straight rye whiskies; a rich aromatic 16yo (80% rye, 10% corn & 10% malted barley) rye with the bold spicy properties of 6yo (95% rye & 5% malted barley) to create a full flavoured, very complex whiskey.
    Not chill filtered in order to retain the whiskeys finest flavour and texture, we can only hope that Daves own distillates end up as remarkable as this one!

    This unique corn whisky is made from roasted Atole, a hopi blue corn meal, which has been used by the Hopi for thousands of years in many ceremonies, representing wisdom and understanding, and the strength that comes through overcoming hardship. We use this rich and nutty corn whisky tradition.

    Baby blue isnt bourbon nor is it white lightning. It has the freshness and verve of traditional corn whisky but with a refined complexity added by brief aging in oak. The result is a round nuttiness and roasty overtones with a smooth finish.

    McCormick Distilling Company was founded in 1856 as Holladay Distillery by Ben Holladay. This corn whiskey has been aged for 30 months before bottling in the lovely earthenware jar. The flavour is slightly yeasty, with touches of vanilla with a short clean finish.

This is the first rye based whiskey produced in New York's Hudson valley for over 70 years. Doubled distilled in in a pot still it has been aged in small new oak casks which gives a richness of flavour to its spicy edge.
