Much like Scotch, the types of whiskey made in America vary a lot when it comes to taste and style. Their origin, production method and ageing process are also protected under federal law, so it’s safe to say that the good people of the U.S of A are serious about their whiskey.
In regards to tasting notes, vanilla, oak and caramel flavours form the foundation of American whiskey. However, due to the use of different grains, American spirits can possess a full range of characteristics. It’s for this reason that the varying styles of American whiskey are subdivided into the following categories:
A mash of 51%-80% corn is used to produce Bourbon, which is then aged in charred white-oak barrels. Bourbons tend to have the smooth and sweet taste that’s associated with American whiskey.
Rye whiskey is made from a mash of at least 51% rye and aged in charred-oak barrels. The result of which is a spicier and fuller-bodied spirit, making it an ideal alternative to bourbon for cocktails that require a bit more of a kick.
In name as in nature, corn whiskey must contain at least 80% corn in the mash, which is then aged in uncharred oak barrels. Wheat whiskey requires a mash of at least 51% wheat and is aged in new, white-oak barrels. Both corn and wheat whiskies tend to be at the softer end of the taste spectrum
Much like Bourbon, Tennessee Whiskey is made from a mash of at least 51% corn and is aged in charred-oak barrels, and this is consistent in two ways. Firstly, the whiskey must be made in Tennessee, and secondly, they generally use the Lincoln County Process — which is where the whiskey is filtered through maple charcoal. One of the most iconic and recognisable examples of this type of whiskey is Jack Daniels.
‘White Dog’ is a term used for unaged whiskey, also known as ‘white whiskey’ or ‘moonshine’. Rather than being aged in casks, white dog whiskey is bottled immediately after distillation, often with water added to reduce the drinking strength.
