  • Quartet Anderson Valley Brut Roederer 12% 75cl
    Jean-Claude Rouzaud, then president of Champagne Louis Roederer and fifth generation descendant of the founder, selected the 580-acre Anderson Valley vineyard and winery site in 1981. Rouzaud, who has since handed down the family tradition and position to son Frdric Rouzaud, believed that estate-owned vineyards were essential to ensure top quality wine, and had searched California for ideal growing conditions throughout the course of several years. There are four distinct vineyards on the estate - hence the name Quartet - from which all the grapes are sourced. The estate covers 500 acres in total. The Anderson Valley is 125 miles north of San Francisco and just a few miles inland from the rugged Mendocino coast thus giving it a similar cool climate to Champagne. The grapes used are the same as used in Champagne - Chardonnay and Pinot Noir.

    Wine Making
    Roederer's winemaking style is based on two elements: complete ownership of its vineyards and the addition of oak-aged reserve wines to each year's blend or cuve. All the grapes for the wines are grown on the Estate. Oak-aged wines from the Estate's reserve cellars are added to the blend, creating a multi-vintage cuve in the traditional Roederer style. Only the cuve (first pressing of 120 gallons/tonne) is used; no premiere or deuxieme taille. The fermentation takes place in high-grade stainless steel tanks at 65 degrees Fahrenheit. No minimal malolactic fermentation is used in order to ensure that the wines age well and retain the fresh, somewhat austere style that is one of the characteristics of Roederer wines.

    An engaging salmon pink colour enhanced by a fine persistent bead. The wine expresses an assortment of red berries, rose petal, apricot blossom and luscious white peach aromas complemented by complex nougat and yeast aromas. The wine had great length, finishing clean, dry and refreshing.

    Described by Robert Joseph as one of the most beautiful vineyards on the planet the rolling hills, sweeping vistas, bluffs and stands of gum trees create a spectacular backdrop. The name originates from an aboriginal word meaning red earth and applies directly to the iron rich red soils of the region. These are classic central Victorian wines, dense, powerful but with a uniquely fine and balanced structure and a marked tannic backbone that allows them to age beautifully. The young but already renowned winemaker Loic Le Calvet studied his craft in Bordeaux but was tempted away to coax the best out of these unique and now fully mature vineyards. Taltarni also have vineyards in Tasmania which contribute to the production of their flagship sparkling wines including the signature Brut Tach Ros.

    Tache is a French word meaning 'stained' and refers to the rare winemaking method used since 1985 by Taltarni to create this fine rose-coloured sparkling wine. It's amazing delicate samlom pink colour is achieved by adding a dash of red wine liqeur to the finished tirage wine at disgorgement. Created from a blend of the three classic sparkling wine varietals sourced from our cool climate vineyards in Victoria and Tasmania.

    Owned and run by Lawrence Warr, Henners is the result of a long term dream to produce the finest English Sparkling Wine. Lawrence started his career as an automotive engineer in the exciting world of Formula One. Having left Formula One, to set up an engineering consultancy, the search for the perfect vineyard site began. The search was a lengthy and dedicated one - as the ideal combination of soils, aspect, slope, altitude and microclimate was difficult to find. After two years he found the site at Herstmonceux, East Sussex. The vineyard was planted in May 2007, with the winery following in 2009. The vineyard is planted with 40% Chardonnay, 39% Pinot Noir and 21% Pinot Meunier. The Henners name derives from Lawrences French ancestry. Henners Dubois was forced to flee Paris during the French Revolution, in the late 18th century.

    In 1717, Amedee Frezier stumbled upon a richly red and unique strawberry fruit while exploring the newly discovered land of Chile. Exicted about his new discovery, Frezier delivered the first strawberry plants ('Fresita' in Spanish) to the royal court in France. Some years later the fragrant fruits delighted the Queen, who enjoyed them with her daily glass of champagne. This is where Fresita takes its inspiration from and we are glad they did.

    Although it's elicious on it's own, here are a couple of quick and easy cocktails you can make using Fresita;

    To finish
    • Orange zests
    • Pieces of strawberries

    Instructions
    • Put all the ingredients in a tumbler glass with ice cubes in it. Decorate with orange zests and pieces of strawberry.

    Ingredients
    • Fresita
    • 15cl of gin
    • 15cl of regular syrup
    • 1clc of lemon juice
    • Ice cubes

    To finish
    • Lemon slices
    • Strawberry slices
    • Cranberries

    Instructions
    • Mix the 45cl of Gin, the 15cl of regular syrup and the 15cl of lemon juice in the cocktail shaker. Add the ice cubes and shake for 15 seconds.
    • Serve in a tumbler glass with ice and fill the rest of the glass with Fresita. Decorate with a slice of lemon, a piece of strawberry and some cranberries.

    Gentle pneumatic pressing followed by slow, cool fermentation in stainless steel. Second fermentation in tank, lasting 4 weeks.

  • The Tight Cluster Sparkling Shiraz Magpie Estate 13.5% 75cl
    A bloody brilliant sparkling red - why arent' there more of these around?! As you poor this tasty wine into your glass, you're instantly captivated by the beautiful rich red nectar with fine spiralling bubbles. The first whiff is of lovely leathery/saddlery aromas and dark red fruit. When the delicate bubbles hit your tongue, soft cracked black pepper mingled with dark spices of cloves and star anise burst forth. Fruit driven, soft with nuances of well rounded raspberry jam - there's such a lovely blob of fruit in this wine, it's delicious!

    In the winery
    The initial wine saw some new oak, but was then transferred into older neutral oak once it was decided to hold the wine back. The blend was put together in 2011 and the wine underwent a secondary fermentation in the bottle. After approx. 13 months, the winemakers decided the wine was ready, decanted into tank adjusted for sugar, and sourced some fabulous young fortified Shiraz for the liqueuring. This wines has been made a touch drier than most other spakling shiraz's on the market.

    All sorts of things from an eye catching apertif, duck pat, juicy rare steak, fall off the bone lamb shanks, to the perfect wine to wash down a sticky chocolate cake!
