Put into the traditional Criaderas y Soleras system of dynamic ageing in the 6th criadera, where the biological ageing takes place under a layer of yeast. Traditional oak casks, preferably American with a capacity of 30 and 36 @. Aged for at least 6 years, passing through the different criaderas until it reaches the solera, from which it is drawn out for consumption.     Manzanilla La Gitana is produced according to the traditional methods as stipulated by the controlling body of the Denomination of Origin Manzanilla-Sanlcar de Barrameda. The vines are planted in Albariza soil in the areaBalbaina andMiraflores in the Jerez Superior District (200 Ha approx). The wine is produced from only free run juice. Fermentation is controlled in water-cooled stainless steel tanks, using the natural yeast on the grape. Fortification to 15% alc.vol then takes place using grape alcohol. The wine is then matured in solera or fractional blending system in casks of American oak in the coastal town of Sanlcar de Barrameda. The maturation is under a veil of yeast or flor thereby ensuring a light dry taste.     This wine comes from the palomino fino grape. reaching 15 of fortification, it is decanted into American oak casks with a capacity of approximately 500 litres, remaining in these butts known as sobretablas for at least six months until after a first classification it is considered ready to be incorporated into the ageing system of the Criaderas and Soleras of Manzanilla where the biological ageing of the wine takes place.

    Lightly salty and yeasty on the nose with a subtle hint of almonds. Initially dry on the palate with a light touch of oxidative flavours. The yeasty minerality continues through tinged with a touch of lemon and more lightly toasted salty almonds. Light, tangy and refreshing, perfectly clean on the finish.   • Pedro Ximenez Cardenal Cisneros Sherry Sanchez Romate 18% 75cl
    Pedro ximenez (PX) wines from Jerez have increased in popularity over the last ten years. Romate are justly proud of their Pedro Ximenez Cardenal Cisneros wine, which was recently voted in the top 100 wines from Spain. PX wines are made with very ripe grapes that have been dried in the sun for up to 20 days. This concentrates the sugars and flavours within the grape as the water evaporates, and gives rise to a much richer must when the grapes are pressed. The weight of sugar means that the wine only achieves a partial fermentation and remains very sweet with a concentrated raisin flavour. Cardenal Cisneros is aged for more than 15 years in the solera system, which gives it a superior depth and greater length of flavour.
    Full of raisins and sultanas with just a touch of nuts, dried fruit and oaky spice. The flavour is big, rich with a luscious velvety feel. Very sweet but with balancing acidity, creamy raisins, espresso coffee and a touch of dark chocolate.

    Fernando de Castilla deals only in prestigious, premium wines. The sherries are all from individual soleras. They are bottled without blending, cold stabilization or filtration of any kind in order to preserve the subtlety, purity and distinctive aromas of these premium wines. The products are all bottled in clear glass to show off the wonderful colour of these wines. After fortification ageing takes place in a solera system. The initial wine has a sugar content of around 300 grammes per litre and is very concentrated. Having spent a long period, around 20-30 years, in barrels the final sugar content of the Antique PX is around 450 g per litre and the colour has developed over a period from a dark mahogany into an intense black.

    In the Vineyard
    Grapes are sourced from Fernando de Castilla's partners' vineyards in the Jerez district. The soil type is Albariza. Picking takes place in early September.

    In the Winery
    The wine is made from the first pressing of grapes, this gives a light fresh style. Fermentation takes place at relatively high temperatures to reduce fruit flavour. This makes a very neutral wine which is perfect for the production of sherry. The wine undergoes malolactic fermentation. In the February after harvest the wine is fortified with grape brandy up to 15% abv. Once at this stage the wine is then added to fill 4/5ths of the butt (600-litre casks of oak American oak) in the youngest Criadera (scale) in the Solera (a Solera is the total number of scales which can be from 3 up to 9). The wine then begins its ageing process under flor. Periodically, a portion of the wine in a barrel is moved into the next scale, using tools called the canoa (canoe) and rociador (sprinkler) to move the wine gently and avoid damaging the layer of flor in each barrel. At the end of the series only a portion of the final barrel is bottled. This process is called "running the scales". Only 20% of finished wine can be removed from the Solera in one year. The ageing process of the Manzanilla Solera takes place in Sanlucar de Barrameda and the average age of the sherry is 3 years old.

En Rama is alive with flavour and is the closest you can get to drinking directly out of the cask.     Manzanilla La Gitana is produced according to the traditional methods as stipulated by the controlling body of the Denomination of Origin Manzanilla-Sanlcar de Barrameda. The vines are planted in Albariza soil in the areaBalbaina andMiraflores in the Jerez Superior District (200 Ha approx). The wine is produced from only free run juice. Fermentation is controlled in water-cooled stainless steel tanks, using the natural yeast on the grape. Fortification to 15% alc.vol then takes place using grape alcohol. The wine is then matured in solera or fractional blending system in casks of American oak in the coastal town of Sanlcar de Barrameda. The maturation is under a veil of yeast or flor thereby ensuring a light dry taste. Only in Sanlcar de Barrameda can the flor grow on the wine 12 months of the year to give Manzanilla its unique style.
