  • Somerset Royal Alchemy 15 years old 42% 70cl
The Somerset distillery matures the brandy in small oak barrels in one of our two bonded warehouses at the other end of the village from Burrow Hill. In the bond, the barrels lose the 'angel share' and absorb all sorts of flavours from the oak. Our colour is natural and from the wood. Over time the brandies soften and mellow. Different oaks affect the character in different ways, so a tasting in the bond is exciting as it is always full of surprises. Sometimes we bottle a barrel as 'single cask' - see the shop. Alchemy is slightly lighter than the Ten Year Old as it is matured in a slightly different barrel mix.

Mellow, rich and smooth. Has finesse and an apple nose. Amazing.

  • Pere Magloire XO Calvados 40% 50cl
The X.O. is the cornerstone of the collection. Connoisseurs appreciate the perfect balance between the fruitiness of the apple and the flavours absorbed during more than nine years of ageing in century-old oak barrels.

It is notable because it is made only from cider from apples harvested in the Pays dAuge, an area covering barely 6% of Normandy. The character this soil gives the apples, combined with double distillation* in copper stills, offers the X.O. a unique aromatic richness.

  • Dupont Hors d'age Calvados 42% 70cl
Dupont Calvados is aged of minimum 6 years in 400 litres oak casks of which 25% are new ones. The oaks come from the Loire Valley. The wood is slightly toasted so that the sap keeps its vanilla aromas. Bottling on demand. Alcohol strength 42%.

Appearence: Golden yellow with copper shades.

Nose: Fresh and elegant, intense, fruity and floral (geranium). The nose takes all its complexity after oxygenation, slightly oaked.

Taste: Smooth and balanced, with a good persistence. Very retro-nasal. It's a good compromise between the freshness of fruits and the concentration of old eaux de vie.

Aperitif: Plain or on ice or with a drop of water to enhance aromas.

Digestive: At a temperature around 52 to 54F.

    Desert: With dark chocolate cakes.
