After hand-harvesting into 15kg crates, whole bunches are pressed and 90% of the must is fermented in stainless steel at a controlled temperature of 10 to 12 degrees to preserve freshness and aromatic intensity. The remaining 10% is fermented in second-use French oak barrels and kept on fine lees with battonage for around 8 to 9 months, adding texture and complexity to the final blend.
