Grapes are hand-picked during the last week of March or first week of April, timing is critical for Sauvignon Gris, where a single day's difference in harvest can be reflected in the wine. Fermentation begins in stainless steel before the wine is transferred to used 5,500-litre French oak barrels for six months, adding texture and subtle smokiness while preserving the variety's distinctive aromatic character.
