The shallow, sandy-loam soils are low in fertility and studded with fragmented stones, encouraging deep root systems and naturally concentrated fruit. The vines are managed with a medium-density canopy to protect the fruit from direct solar radiation, with drip irrigation and no-till farming preserving a natural cover of native plants combined with rye. Grapes are hand-harvested in 20kg crates during the second half of March. Winemaking follows traditional methods, with two days of cold pre-fermentative maceration, pump-overs, rack-and-return and punch-downs during fermentation at 25 degrees.
