Description
The vineyard itself is shaped by three distinct soil types, found at the top, middle, and bottom sections of the hillside. Each soil variation imparts unique characteristics to the grapes, adding complexity and depth to the final wine. Through careful selection and blending of individual components, the winemaking process ensures a wine that reflects the richness and diversity of the vineyard.
Each varietal parcel is harvested at peak ripeness and processed separately to maintain its distinct character. The grapes undergo crushing and fermentation in a combination of open and closed fermenters, with regular pump-overs and plunging to enhance flavour and texture. After fermentation, the wine is pressed into stainless steel tanks for secondary malolactic fermentation before being transferred into a blend of barrique, hogshead, and large-format French oak.
