Vignerons de Florensac – Pioneers of Sustainable White Winemaking in the South of France Located just inland from the Mediterranean coast, the Florensac terroir is one of the oldest viticultural areas in southern France. The vineyards are situated on high ground, where clay and limestone soils enhance minerality and structure. Committed to sustainable agriculture, the growers avoid chemical treatments in favor of environmentally responsible practices. To preserve the delicate aromas and prevent oxidation, the grapes are machine-harvested at night, when temperatures are cooler and optimal freshness can be maintained.
Winemaking Philosophy Under the guidance of oenologist Roques Stephane, the winemaking process at Vignerons de Florensac is both eco-conscious and quality-driven. Pest control is achieved through green techniques, and a commitment to sustainability is evident in the use of solar-powered refrigeration units, which maintain cool temperatures during maceration and fermentation. After a gentle pneumatic pressing, the juice is fermented in stainless steel tanks at low temperatures using carefully selected cultured yeasts. The wine is then aged on fine lees with regular bâtonnage (lees stirring) to develop richness, roundness, and enhanced mouthfeel.
