Production The grapes are obtained from the oldest vines on Uggiano's Colli Fiorentini and Classico estates. Following crushing, they are fermented in stainless steel tanks using selected yeasts, with the must being pumped over the skins twice daily. After 10–15 days, the wine is transferred to French oak barriques (from Allier, Nevers and Vosges) where it matures for around 12 months. It then undergoes an additional 6–8 months’ ageing in large oak casks (30–60 hl), followed by at least 12 months’ refinement in bottle prior to release.
