Carefully harvested in the cool of dawn and early evening, the Vermentino grapes are swiftly transported to the winery for meticulous sorting and gentle pressing. The clear juice undergoes settling in stainless steel tanks at a chilled temperature to remove any solids. Fermentation takes place at a cool 13°C for three weeks, ensuring the preservation of the grape’s natural vibrancy, fresh acidity, and delicate peach notes. Once fermentation is complete, the wine is racked through a series of tanks over several weeks to remove lees before undergoing light filtration. Bottling takes place in early spring following the harvest, capturing the wine’s pure, fresh character.
