Nathalie Vignier, a sixth-generation winemaker from Champagne, specializes in Blanc-de-Blancs. Her family's estate, Champagne Paul Lebrun, owns vineyards in prestigious Grand Cru and Premier Cru villages. Vignier's focus is on terroir, with vineyards in the Cote des Blancs and Côte de Sezanne. She aims to preserve her family's legacy and produce high-quality wines.
The Chardonnay grapes come from the Cote des Blancs and Cote de Sezanne. Vinification takes place in stainless steel tanks, followed by three years of aging on the lees. The finished wine has a Brut dosage of 8 grams per liter. The wine offers aromas of almonds, apple, peach, and citrus. It's fresh, zesty, and vibrant on the palate, with a citrus bite and a hint of salinity.
This Champagne pairs well with seafood, such as seared salmon or cooked oysters.
