Description
The objective for crafting this wine was to individually showcase each of the five components, creating distinct varietal wines. After a year in barrels, the wines underwent a blind tasting, with those scoring below 90 points excluded from the final blend. The blend's composition was then determined based on the blind tasting scores. The resulting cuvée, named De Compostella ('The Compilation of Stars'), saw each variety spending 12 months in barrels as a single-variety wine before being blended. Subsequently, the blended wine matured for an additional 12 months, totaling 24 months in barrels. This aging process included one-third in new French Oak, another third in 2nd fill, and the final third in 3rd fill French oak barrels.
Deep, dark intense ruby colour. Blackcurrant and black cherry fruit with hints of violets, cedar and cinnamon. Rich and complex with mineral, black berry fruit and dark chocolate on the finish. Harmoniously composed of sufficient of each of the five Bordeaux varietals to ensure none dominates. This wine shows a consistent, linear flavour profile with a polished finish.
